My other love…{Personal- Food Photography}

I truly love what I do, eternalising (yes i totally made up a word:) ) a special moment or an everyday moment to be treasured and held dear is a privilege that I’m totally grateful & blessed to able to do.

The other thing I love to do is to cook (and of course photograph what I cook) and while this post has no actual ‘cooking’ involved the preparation of food for our loved ones is just as important and equally treasured in the hearts and minds of our families when looking back. I know personally I got my need to feed people from my Dad who still thrives on being in the kitchen and being able to cook for the kids and now their families a meal and just watch the chaos when it’s all ready πŸ™‚

Anyway, I’ve been thinking of afternoon treats for my kids for afterschool snacks that don’t come out of a packet and came across these morsels of sinful goodness (oxymoron?). Probably not the healthiest nor are they super clean to eat but I tell you you now…. you will be and I quote “the best mummy on earth” when you serve these up πŸ™‚

Peanut Butter Pretzel Bites

Ingredients

1 cup crunchy peanut butter

Approx 1/2 cup icing sugar

Approx 3/4 cup brown sugar

Pretzels

1 bag dark chocolate chips

Directions

Combine first 3 ingredients & mix until combined. At this point if the filling will roll easily into balls without sticking to your hands you’re ready to go. If not, add a little more of each sugar until you reach a consistency that is easy to roll.

 

Use a teaspoon measure to scoop the filling. Roll each portion into a small ball, then sandwich them between two whole pretzels. When all the balls are rolled and successfully sandwiched, stick the whole tray in the freezer for about half an hour.

Pour the chocolate chips into a microwave safe bowl and heat at 30-second intervals, stirring occasionally until completely melted. Remove the pretzel sandwiches from the freezer and quickly dip each half-way into the melted chocolate. Return to the tray and repeat with remaining sandwiches. When all are dipped, return the tray to the freezer to set up completely. Store the sandwiches in the refrigerator until serving time.
